Chocolate Zucchini Bread

Ingredients:

  •  3 eggs
  • 1 cup vegetable oil
  • 2 cups sugar
  • 1 tablespoon vanilla extract
  • 3 cups zucchini, peeled, grated
  • 2 1/2 cups flour
  • 1/2 cup baking cocoa
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon baking powder
Directions:
Preheat oven to 350 degrees. In a large mixing bowl, beat eggs, oil, sugar, and vanilla.  Stir in zucchini. Combine dry ingredients and add to zucchini.  Mix well by hand.  Pour into 2 greased 8x4x3-inch loaf pans. Bake for 1 hour or until a toothpick comes out clean.  Makes 2 loaves.

 

Cranberry Nut Bread

Ingredients:
  • 2 cups flour
  • 1 cup sugar
  • 3/4 cup orange juice
  • 1 1/2 teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 1 large egg
  • 2 tablespoons of melted butter
  • 1 cup cranberries
Directions:

Preheat oven to 350 degrees. In a medium size bowl, whisk flour, sugar, baking powder, baking soda, and salt.  Add egg and melted butter. Mix together. Fold in cranberries. Spoon batter into a greased 5×9 bread pan. Bake 1 hour or util toothpick comes out clean.

Oven Baked Pancake

Ingredients:
  • 2 eggs
  • 1/2 cup flour
  • 1/2 cup milk
  • dash of salt
  • 2 teaspoons of buter
Directions:

Preheat oven to 400 degrees. Spray a 9″ glass pie plate and heat until butter is melted.  Whisk eggs, milk, flour, and salt in a medium size bowl. Pour  batter into the hot pie plate.  Return to the oven and bake for 25 minutes or until golden brown.  Remove from pie plate to serving plate.  Sprinkle with confectionary sugar.  Top with bacon and fresh fruit.

Old Fashion Blueberry Muffins

Ingredients:
  • 1 3/4 cups flour
  • 3/4 cup milk
  • 1/2 cup sugar
  • 2 1/4 teaspoons of baking powder
  • 1/2 teaspoon of salt
  • 1/3 cup canola oil
  • 1 large egg
  • 1 cup fresh or frozen wild bleberries
Directions:

Preheat oven to 400 degrees. In a medium bowl, add flour, milk, egg, baking powder, and salt.  Stir gently until mixed. Carefully fold in blueberries. Fill muffin cups approximately 2/3 full.  Bake for 20 minutes or until golden brown.  Remove from muffin tins to cool.

Country Apple Fritter Bread

Ingredients:
  • 1/3 cup light brown sugar
  • 1 teaspoon ground cinnamon
  • 2/3 cup sugar
  • 1/2 cup  butter, softened
  • 2 eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups flour
  • 1 3/4 teaspoons baking powder
  • 1/2 cup milk
  • 2 apples, peeled and chopped, mixed with 2 tablespoons granulated sugar and 1 teaspoon cinnamon
Old Fashion Creme Glaze
  • 1/2 cup confectionary sugar
  • 1-3 tablespoons of milk or creme
Directions:
Preheat oven to 350 degrees. Use a 9×5-inch loaf pan and spray with non-stick cooking spray.
Mix brown sugar and cinnamon together in a bowl. Set aside.
In another medium size bowl, beat white sugar and butter together using an electric mixer until smooth and creamy.  Beat in eggs, one at a time, until blended. Add vanilla extract.
Combine and whisk flour and baking powder together in another bowl and add into creamed butter mixture. Stir until blended. Mix milk into batter until smooth.
Pour half the batter into the prepared loaf pan.  Add half the apple mixture, then half the brown sugar/cinnamon mixture.
Lightly pat apple mixture into batter.
Pour the remaining apple mixture, then the remaining brown sugar/cinnamon mixture.
Lightly pat apples into batter. Swirl brown sugar mixture through apples using a knife.
Bake for 50-60 minutes or until a toothpick inserted in the center of the loaf comes our clean.
To make glaze, mix confectionary sugar and milk or cream together until well mixed.  Let bread cool for about 15 minutes before drizzling with glaze.

Easy Beignets

Ingredients:

 

  • 1 cup flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 tablespoons vegetable oil
  • 1 egg
Directions:
In a small powder, whisk together flour, sugar, baking powder, and salt.  Set aside.
In a medium bowl, whisk together milk, oil, and egg. Add dry ingredients to milk mixture. Whisk until moistened.
Heat an ebelskiver pan over a medium heat.  Spoon batter into each cavity.  Add a small dollop  of fruit jam. 
Cook until bubbles appear.  Cut over carefully.  When golden brown, carefully remove from pan to serving plate. Sprinkle with confectionary sugar and top with fresh berries

Homemade Granola

Ingredients:
  • 2 cups whole rolled oats
  • 1/3 cup brown sugar
  • 1 large egg
  • 1/4 cup melted butter
  • 1/2 teaspoon of salt
  • 1/2 cup dried cranberries
  • Optional: 1/2 cup walnuts, 1/2 cup coconut flakes
Directions:
Preheat oven to 350 degrees and line a baking sheet with parchment paper.
In a medium size bowl, combine oats, brown sugar, egg, and salt.  Mix.  Drizzle in the melted butter and mix until combined.  Stir in cranberries.  Scoop granola onto the baking sheet and press mixture into a thick oval.  This will encourage clumping.
Bake for 15 minutes. Rotate the pan halfway through and use a fork to gently break the granola apart just a bit.  Bake for 15 minutes more, or until golden brown. Cool.

Fresh Strawberry Bread

Ingredients:
  • 1/2 cup butter softened
  • 1 cup sugar
  • 4 ounces cream cheese, softened
  • 2 eggs
  •  1 teaspoon vanilla extract
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup yogurt, plain or vanilla
  • 1 1/2 cups fresh strawberries, chopped
Directions:
Grease and flour a 9×5 loaf pan. Preheat oven to 350 degrees.
Cream butter, sugar, and cream cheese until light and fluffy.  Add eggs one at a time. Mix in vanilla.
In a separate bowl, mix flour, baking powder, baking soda, and salt.  Blend flour mixture with butter mixture just until blended.  Add buttermilk and only stir until just combined.  Do not over mix.
Carefully fold in strawberries. Dough mixture will be think.
Bake for 50-60 minutes or until toothpick comes out clean.
